Broccoli Cheddar Soup |

Ingredients:
1 stick butter or margarine
1 onion - diced
2 cloves garlic - minced
1/8 teaspoon pepper
1/4 teaspoon salt
1-1/2 pounds broccoli crowns - chopped
1 cup broth (chicken or vegetable)
2 cups milk
8 ounces cheddar cheese
water

Directions:
Melt butter over medium heat in a stock pot. Cook onion in butter until soft; add garlic, salt, and pepper. Cook for about one minute, then add in broccoli. Pour broth over, and add water to cover broccoli. Bring to a boil and let simmer till broccoli is tender (about 15 minutes).
Warm milk then whisk flour into milk until dissolved. Stir into soup, stirring frequently, until thickened. Reduce heat and stir in cheese until melted and heated through. Garnish with cheese, if desired.
