| Real Food for Real People | | New Crock Pot for Mother's Day | May 12, 2010 | I love getting "cooking stuff" for gifts! I got a new Crock-Pot for Mother's Day. I had a good one, but I wanted one with the "warm" setting. The LOW setting is great for slow cooking, but with a WARM setting, you can leave cooked food warming in the pot without worrying about it overcooking. For my first recipe with the new slow cooker, I'm trying Coq A Vin. (See the Every Day is a Food Holiday calendar for recipe). I followed the recipe as listed, but after browning the chicken and getting the vegetables started, I threw it all in the slow cooker and let it cook on LOW for about 8 hours. He's a freshman in college, and has asked me to help him come up with some simple menus he can prepare for dates that will ... impress the girl! I got together with my mother to see what we could come up with when we put our heads together. She had recently found a recipe for Tilapia Packets with Baby Spinach and Asparagus. We decided it would be really good served with long grain wild rice. A simple, but elegant salad for starters, and finished with a pretty, tasty dessert. Mom chose a Cherry Chiffon Dessert. | Gardening Basics | | Late Start | May 14, 2010 | I'm getting a really late start on my garden this year. If you've read my previous blogs, you'll know that I prefer container gardening, but have kind of tried some "flower bed" vegetable gardening, as well. (Without much luck, I should add!) This year, I just really haven't gotten in the mood to do much. | Eating for Health | | High Fructose Corn Syrup - Is It Really Bad For Us? | May 12, 2010 | There's been a lot of hype about High Fructose Corn Syrup (HFCS), but is it really as bad as its reputation? High fructose corn syrup is a sweetener made by extracting corn syrup (a liquid sweetener) from corn and chemically altering it. Corn syrup is mostly glucose (a simple sugar). When it is altered to make HFCS, it is changed so that it is a combination of fructose and glucose. The percentage of fructose can be anywhere from 40% to 90%. Sugar (table sugar - from sugar cane or sugar beets) is sucrose, which is also a combination of fructose and glucose - about 50% of each.So what's the difference? | Cooking for a Crowd | | Wedding Food | August 11, 2009 | Cooking for a crowd isn't all it's cracked up to be. I recently prepared food for my son's wedding reception. We weren't really sure how many people would be there. We figured somewhere between 50 and 100, so we made enough food for 100. It was a morning wedding, but the reception started at about noon, so we needed to provide a light lunch. We decided the easiest thing to do would be sandwiches. I found some really nice sandwich rolls at the Wal-Mart bakery, and we got an assortment of deli meats and cheeses. (I know, this is cheating, because it's not really cooking!)
